Ortiz sources Cantabrian anchovies daily from auctions along Spain's north coast, processing them immediately. After 6-12 months in salt, they're washed, trimmed, and hand-filleted. Each anchovy is individually filleted by hand and packed in olive oil. This meticulous process results in anchovies with a dense texture and rich flavor.
