This pasteurised cow's milk cheese starts with their traditional Caerffili, known for its light, crumbly, yet creamy texture and a fresh, subtly tangy, often lemony flavor. The cheese is then lightly smoked on the farm using oak chips from local woodlands, imparting a wonderful, earthy smoky dimension that beautifully complements the cheese's inherent clean freshness without overpowering it.
