Description
Arborio rice is an Italian rice variety valued for its quality and characteristics. Arborio has large grains with a pearly white colour.
It guarantees perfect cooking, making it ideal for preparing risottos. Arborio grains increase in volume on cooking, while retaining an ‘al dente’ core as they gradually release their outer starch. This produces a creamy texture and allows perfect ‘mantecatura’ – the final flourish, when olive oil or butter and cheese are mixed in to make the risotto extra rich.
