Description
Coren Chestnut-Fed Ham is a premium Spanish cured shoulder produced by Coren, a cooperative based in Galicia, north-western Spain. Since 2012, its Selecta range has been made from pigs raised on a natural chestnut-rich diet, a traditional feeding method that gives the meat a delicate sweetness and subtle nutty flavour.
Expertly cured using traditional artisan methods, the paleta develops fine marbling, a tender texture and a smooth, melt-in-the-mouth finish. Produced from the front leg (shoulder) of the pig, paleta is smaller than jamón, which comes from the hind leg, and offers a rich, well-balanced flavour that is perfect for charcuterie boards, tapas or simply enjoyed on its own.
